Taco Soup Frios Recipe

  • Author: Chef Zoe
  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Description

A comforting and hearty taco soup that captures the bold flavors of tacos in a warm, spoonable dish. Made with seasoned ground meat, beans, corn, and tomatoes, this one-pot meal is easy to prepare and perfect for busy weeknights. The “frios” toppings—like sour cream, shredded cheese, and avocado—add a refreshing contrast of temperatures and textures.

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) diced green chilies
  • 1 packet (or 2 tbsp) taco seasoning
  • 4 cups beef or chicken broth
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Frios Toppings:

  • Shredded cheese
  • Sour cream or Greek yogurt
  • Avocado slices or guacamole
  • Crushed tortilla chips
  • Chopped cilantro
  • Lime wedges

Instructions

  • Cook the Meat: Heat olive oil in a large pot over medium heat. Add ground beef or turkey and cook until browned. Drain excess fat.
  • Add Vegetables: Stir in diced tomatoes, black beans, pinto beans, corn, and green chilies.
  • Season the Soup: Sprinkle in taco seasoning, cumin, chili powder, garlic powder, salt, and pepper. Mix well.
  • Simmer: Pour in broth, stir, and bring to a boil. Reduce heat and let simmer for 20-30 minutes.
  • Serve and Garnish: Ladle the soup into bowls and top with frios garnishes like cheese, sour cream, avocado, and crushed tortilla chips.

Notes

  • For a spicier soup, add diced jalapeños or extra chili powder.
  • To thicken, mash some beans or stir in a cornstarch slurry.
  • Can be made in a slow cooker: Cook on low for 6-8 hours or high for 3-4 hours.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
