Instructions
- Preheat oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and set aside.
- Prepare the sweet potatoes: Bake or boil the sweet potatoes until fork-tender. Let cool, then peel and mash until smooth.
- Mix the filling: In a large bowl, whisk together the mashed sweet potatoes, melted butter, granulated sugar, brown sugar, and evaporated milk until smooth.
- Add eggs and spices: Beat in the eggs, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
- Assemble the pie: Pour the filling into the prepared pie crust, smoothing out the top.
- Bake: Place in the oven and bake for 50-60 minutes or until the center is set and a toothpick inserted in the middle comes out clean.
- Cool: Let the pie cool completely before slicing. Serve at room temperature or chilled with whipped cream.
