- ½ cup brown sugar

- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup raisins or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, combine oats, flour, baking soda, salt, and cinnamon. Set aside.
- In a separate bowl, cream together butter and sugars until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- If using, fold in raisins or chocolate chips.
- Scoop rounded portions of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden but the center is still soft.
- Let the cookies cool on the baking sheet for 2 minutes before transferring them to a cooling rack.
