Ingredients
Scale
- 1 cup purple cabbage, chopped
- 1 cup purple carrots, chopped
- 1 cup purple sweet potatoes, peeled and diced
- 2 cups cooked black beans (or 1 can, drained and rinsed)
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth (or chicken broth)
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1/2 cup coconut milk (optional, for creaminess)
- Optional garnishes: fresh cilantro, avocado slices, lime juice
Instructions
- Prep Vegetables: Chop purple cabbage, carrots, and sweet potatoes into bite-sized pieces. Mince garlic and chop onions.
- Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add garlic and onions, sautéing until fragrant and translucent, about 5 minutes.
- Add Vegetables: Add purple cabbage, carrots, and sweet potatoes. Stir to combine with onions and garlic.
- Season: Sprinkle in cumin, smoked paprika, salt, and pepper. Stir well to coat the vegetables in the seasonings.
- Simmer: Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat and simmer for 20 minutes or until the vegetables are tender.
- Add Beans: Stir in the black beans, and let simmer for an additional 5 minutes to heat the beans through.
- Blend or Leave Chunky: Use an immersion blender to blend the soup partially for a creamy texture or leave it chunky, depending on your preference. Stir in coconut milk for extra creaminess.
- Serve: Ladle soup into bowls and garnish with fresh cilantro, avocado slices, and a squeeze of lime juice for added brightness.
Notes
- If you prefer a smoother soup, you can blend it completely.
- Adjust seasonings to taste, adding more cumin or smoked paprika for depth of flavor.
- For a thicker soup, reduce the amount of broth.
