- 2 tbsp butter
- 2 tbsp flour
- 2 tbsp Japanese curry powder
- 1 tbsp oil
- 1 onion, sliced
- 2 carrots, chopped
- 2 potatoes, diced
- 1 lb chicken (or beef, tofu), cut into bite-sized pieces
- 4 cups chicken or vegetable broth
- 1 tbsp soy sauce
- 1 tbsp honey or grated apple (optional for sweetness)
- 1/2 cup frozen peas (optional)
- Salt and pepper, to taste
- Steamed rice or udon noodles, for serving
Instructions
1. Prepare the Curry Roux:
- In a small saucepan, melt butter over low heat. Stir in flour and cook until golden brown.
- Add curry powder and mix well. Remove from heat and set aside.
2. Cook the Vegetables and Protein:
- Heat oil in a large pot over medium heat. Add onions and sauté until translucent.
- Stir in carrots and potatoes, cooking for another 3 minutes.
- Add the protein of your choice and brown on all sides.
3. Simmer the Curry:
- Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
- Stir in the prepared curry roux, allowing it to thicken the sauce.
- Add soy sauce, honey (if using), and frozen peas. Simmer for another 5 minutes.
4. Serve:
- Taste and adjust seasoning as needed. Serve hot over steamed rice or udon noodles.
Notes
- For a vegetarian version, use tofu or chickpeas and vegetable broth.
- Adjust sweetness by adding more or less honey or grated apple.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
