Description

Golden Curry is a rich, mildly sweet Japanese-style curry made with a smooth, flavorful roux. It features a comforting blend of umami, warm spices, and a creamy consistency, making it a family-friendly dish. Perfect served over rice or noodles, this hearty curry is easy to prepare and customize with your favorite ingredients.


Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 tbsp Japanese curry powder
  • 1 tbsp oil
  • 1 onion, sliced
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 lb chicken (or beef, tofu), cut into bite-sized pieces
  • 4 cups chicken or vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp honey or grated apple (optional for sweetness)
  • 1/2 cup frozen peas (optional)
  • Salt and pepper, to taste
  • Steamed rice or udon noodles, for serving

Instructions

     1. Prepare the Curry Roux:

  •   In a small saucepan, melt butter over low heat. Stir in flour and cook until golden brown.
  • Add curry powder and mix well. Remove from heat and set aside.

     2. Cook the Vegetables and Protein:

  • Heat oil in a large pot over medium heat. Add onions and sauté until translucent.
  • Stir in carrots and potatoes, cooking for another 3 minutes.
  • Add the protein of your choice and brown on all sides.

     3. Simmer the Curry:

  • Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until vegetables are tender.
  • Stir in the prepared curry roux, allowing it to thicken the sauce.
  • Add soy sauce, honey (if using), and frozen peas. Simmer for another 5 minutes.

     4. Serve:

  • Taste and adjust seasoning as needed. Serve hot over steamed rice or udon noodles.

Notes

  • For a vegetarian version, use tofu or chickpeas and vegetable broth.
  • Adjust sweetness by adding more or less honey or grated apple.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
