Instructions
- Prepare the Crab Meat: Carefully pick through the crab meat to remove any shells. Set aside.
- Sauté Aromatics: In a skillet, melt butter over medium heat. Add shallots and garlic, cooking until fragrant. Pour in white wine and reduce until nearly evaporated. Let cool slightly.
- Make the Custard Base: In a bowl, whisk egg yolks with heavy cream until smooth. Gradually add the cooled shallot mixture, whisking continuously. Season with salt and pepper.
- Combine with Crab: Gently fold the crab meat into the custard mixture, ensuring even distribution.
- Fill Ramekins: Divide the mixture evenly among 4 small ramekins, leaving space at the top.
- Bake in a Water Bath: Place ramekins in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins. Bake at 325°F (160°C) for 25–30 minutes or until the custard is set but slightly jiggly in the center.
- Caramelize the Top: Remove from the oven and cool slightly. Sprinkle grated Parmesan over each ramekin. Use a kitchen torch to caramelize the cheese until golden and crispy.
- Serve: Garnish with fresh herbs, and serve immediately with toasted crostini or a light salad.
