Description

Cinnamon Sugar French Toast Muffins bring together the crispy edges of French toast and the soft, fluffy center of a muffin. Infused with warm cinnamon and vanilla, these muffins are perfect for a quick breakfast or a delightful brunch treat. They’re easy to make, meal-prep friendly, and have a crunchy caramelized topping for extra indulgence.

Ingredients

Scale
  • 6 cups day-old bread, cubed (brioche or challah recommended)
  • 4 large eggs
  • 1 ½ cups whole milk (or a mix of milk and cream)
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 tbsp unsalted butter, melted

Cinnamon Sugar Topping:

  • ¼ cup granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp melted butter

Instructions

  • Preheat Oven: Set to 350°F (175°C) and grease a muffin tin.
  • Prepare Bread: Cut or tear bread into small cubes and place in a large bowl.
  • Make Custard: In a separate bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and salt.
  • Soak Bread: Pour the custard over the bread cubes and gently stir until fully coated. Let sit for 5-10 minutes to absorb.
  • Fill Muffin Tin: Divide the mixture evenly into the greased muffin cups.
  • Bake: Place in the oven and bake for 20-25 minutes, until golden brown and set.
  • Add Cinnamon Sugar Topping: Brush with melted butter and sprinkle with cinnamon sugar immediately after baking.
  • Serve Warm: Enjoy fresh or store for later use.

Notes

  • Stale bread absorbs the custard better and prevents sogginess.
  • For added texture, mix in chopped nuts, chocolate chips, or fruit.
  • Store in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
  • Reheat in the oven at 350°F for 5-7 minutes for best texture.
