  • 1 lb beef tenderloin, cut into small cubes
  • 1 tbsp olive oil
  • 2 cups mushrooms, finely chopped (cremini or shiitake)
  • 2 tbsp shallots, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp Dijon mustard
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a skillet, heat butter over medium heat. Add the mushrooms, shallots, and garlic. Cook until the moisture from the mushrooms evaporates, and the mixture becomes a thick paste. Season with salt and pepper.
  • Heat olive oil in a separate skillet. Sear the beef cubes on all sides for 1-2 minutes until browned. Remove and let cool slightly.
  • Roll out the puff pastry on a floured surface and cut into squares that are slightly larger than the beef cubes.
  • Spread a thin layer of Dijon mustard on each pastry square. Place a spoonful of mushroom duxelles, followed by a piece of seared beef.
  • Fold the pastry around the filling, sealing the edges tightly. Brush with the beaten egg.
  • Arrange the bites on a baking sheet and bake for 12-15 minutes or until golden brown and crisp.

Notes

  • For a more decadent version, add cheese like brie or blue cheese to the filling.
  • You can freeze the unbaked bites for up to 3 months. Bake directly from frozen, adding a few extra minutes to the cook time.
